PRODUCTION STEPS

Easy way.
Key Cheese process is straight and simple as never before.
Few steps few ingredients.
Always same high standard quality in every environmental conditions.

Load Compact 25 with fat.
Uht, Butter or Veg fat and heating up.
Adding Key Cheese: every pack is for one batch production, this will help the operator to keep simple the procedure.
Cooking Stretching. All the ingredients are in. Product need to be cooked and stretched using the two independant screws. During this step operator adds potable water. Quantity is dictated by the product desired: more if bocconcino - less if pizza cheese. You can appreciate how this step is fast.
Discharge Hot product. After absorbing water and when the texture is optimal, hot cheese can be discharged directly in a plastic mould or to a moulder with forming drums.
Final result. High Moisture. Here you can appreciate the final result after 12 h in the cold store which can be your fridge. This product is very firm and easy to shred despite moisture is 56%. This means lower cost but also a better behaviour on the pizza. All the mass producers have to keep moisture in the range 48-51% to avoid stickness.
